Processing, Packaging, Transport


The majority of harvested salmon and trout are processed and sold chilled as whole, gilled and gutted product. The fish are packaged on ice in sealed containers and flown to markets on the same day as harvesting.

Products Available


Salmon and trout are harvested to market demand. Sizes vary but are around 3-5 kg whole for salmon and 1.5kg+ for trout. As the majority of product is sold whole, gilled and gutted, average weights are also expressed as HOGG (head on gilled and gutted). Dress out weights are approximately 85-90% of the whole weight depending on maturation status, size and species. Most fresh chilled HOGG product is sold in the domestic market with the remainder sold in Japan.

Other products include cutlets, fillets, smoked slices, smoked sides, pate, caviar and gravlax.

Quality of the fish is of paramount importance to the industry and great care is taken during grow-out, handling, harvesting and processing to prevent scale loss, bruising, and internal spotting to maximise flesh quality.
