Foodborne illness is a big public health issue. Food quality, spoilage and waste are important factors in food production and consumption, particularly in an increasingly globalised economy. Food is regularly exported overseas with significant distance between the farm, or point of production, and the consumer. But how do we know what is safe when producing, handling and consuming food?

Understanding how bacteria in food grows

Food microbiologist, Professor Mark Tamplin, is an expert in understanding how bacteria grow in food. Professor Tamplin is in the TIA Food Safety Centre and his knowledge is being used to predict and manage the safety of food supply chains. It can also improve economic outcomes for food producers.

'By translating biological knowledge into mathematical models that show the growth and death of bacteria in certain environments, we are providing tools that food producers can use to inform their practices,' said Professor Tamplin.

One such tool is the Meat & Livestock Refrigeration Index that has helped Australia's meat and livestock industry, and consumers, save an estimated $260 million over 30 years.

'The industry wanted to carve meat that was un-chilled because it was easier, and therefore safer, to carve. The Refrigeration Index was created to predict how E. coli, if present in the meat, would grow. As the meat cools, the producer measures the temperature of the meat with a probe, puts it into the spreadsheet and determines whether it is safe to be sent to the market.

'Understanding the growing conditions for E. coli showed that it was possible to carve the meat unchilled and still ship it safely. This reduced work injuries and refrigeration costs significantly.'

Another example of biological knowledge improving food safety is with Pacific oysters. There is a bacteria that lives naturally in marine environments and is present in very low levels in cold waters where Pacific oysters are grown. However, the organism can increase in the oysters during transport to unsafe levels if temperatures exceed a certain level. Food microbiology was able to determine safe transport temperatures to slow the growth of the organism.

It is not just food producers that benefit from an understanding of food microbiology. Food handlers at every point in the supply chain have an important role to play in food safety.

Professor Tamplin was instrumental in the development of a food handler training program in the USA called 'Eat Safe'. The program was developed following the biggest salmonella outbreak on record due to poor food handling practices.

He is also jointly responsible for creating the world's largest database on bacteria and how they grow in food, ComBase.

'I developed ComBase with an international colleague as a place to store food safety information and make it freely accessible. Food safety information needs to be available to everyone.'

Associate Professor Tamplin said that unsafe food practices, even by the smallest supplier, can hurt not only the producer and consumer, but the industry as a whole.

'If one company does something incorrectly, it ripples through the entire industry,' said Professor Tamplin.

'It only takes one mistake to seriously damage the brand of the company, the industry and the destination.'

For this reason Professor Tamplin is keen to develop a food lab in Tasmania that would validate the processes of small food producers before they go to market.

'Food labs are expensive to set up because they require a diverse range of equipment, but the long-term benefits to the brand of a food-producing destination like Tasmania would be worth it.'

Mark Tamplin is in the internationally recognised Food Safety Centre at the Tasmanian Institute of Agriculture. He is co-founder of the largest on-line food microbiology database, ComBase. He led the formation of a Master in Applied Science-Food Safety specialisation.

Mark holds a PhD in Medical Sciences, with a speciality in Medical Microbiology & Immunology. His service on committees and panels includes the World Health Organization, Food & Agricultural Organization, US Centers for Disease Control, and three terms on the US National Advisory Committee on Microbiological Criteria for Foods, appointed by the Secretary of the USDA. He is currently serving a third term as Fellow with Food Standards Australia New Zealand (FSANZ).

He has published 110 journal articles, 12 book chapters, been cited ~3,000 times, and has helped secure more than $17 million in extramural funding.

Biography

Professor Mark Tamplin holds a PhD in Medical Sciences, with a speciality in Medical Microbiology & Immunology, from the University of South Florida, College of Medicine, USA.

Prior to joining the University of Tasmania, Mark led the US Department of Agriculture-Predictive Microbiology program in Philadelphia, USA. He was also Associate Professor at the University of Florida from 1990-1999, and researcher with the US Food & Drug Administration from 1987-1990. He has held Adjunct appointments at Purdue University, Rutgers University, and the University of Maryland.

Mark is in the TIA Food Safety Centre (FSC), internationally recognised for research and training programs encompassing strategic and applied science in supply chains, risk assessment, and systems biology of food-borne microorganisms. The FSC extends this knowledge through tools used by industry and government to manage safety and quality in global food systems.   

He led formation of the new Master in Applied Science (Food Safety) specialisation, and is currently exploring partnerships with overseas universities to reach a global audience. Mark coordinates two post-graduate units, including Science-Based Supply Chain Management and Advanced Topics in Food Safety.

Mark is co-founder of the on-line food microbiology database, ComBase, and book author. Over his career, he has published 110 journal articles, 12 book chapters, been cited ~3,000 times, and has helped secure more than $17 million in extramural funding.

Professor Tamplin is Centre Leader of the TIA Food Safety Centre, and previous Director of the Australian Food Safety Centre of Excellence, Lead Scientist of the USDA Predictive Microbiology Research Program. He is currently Director of the ARC Industrial Transformation Research Hub Pathways to Markets project.

Mark's research expertise focuses on new ways to improve the safety and quality of food, reducing foodborne disease and food waste, and thereby increasing food security. Predictive microbiology tools (models) are produced to help industry better manage complex global food supply chains.

Publications

Early in his research career,Mark published extensively on a newly discovered seafood pathogen, Vibrio vulnificus, including its ecology and the infectious process in humans. Since then, his publications have covered a wide range of topics, from how pathogens colonise produce and the environment, to predictive models that manage risk in supply chains.

Training Centre for Innovative Horticultural Products: Adding value to horticulture value chains from producer to consumer. This project will produce "industry-relevant" researchers and lead to more convenient and longer lasting fresh and fresh-like fruits and vegetables. The project will involve growers, food processors and a major retailer to increase industry productivity, expand markets for Australian foods, and increase choices of healthy products for consumers. This Centre will train a pool of researchers focussed on needs and opportunities in the Australian food industry through projects and formal training with active collaboration from food growers, processors and retailers. This training model and its graduates will enhance the capacity of Australia's fresh produce industry to innovate to meet consumer needs and develop opportunities in local and international markets, aiding Australia's food security and improving the industry's competitiveness.
