Rocco Longo is a Junior Research Fellow with UTAS at the Tasmanian Institute of Agriculture. A University of Turin (Italy) undergraduate in Viticultural and Oenological Sciences, after a 4-year break working in the Alpine Valley (Victoria) as winemaker, Rocco went to Charles Sturt University to study for his PhD in Wine Science. Part of his work was the development of winemaking practices to enable the production of lower alcohol wines with a flavour profile similar to that of the standard alcohol ones. Rocco is an expert in sensory evaluation of wines and instrumental analytical methodologies for the measurement of aroma compounds.

Biography

Rocco grew up in Italy, yet after completing his Bachelor and Master in Viticultural and Oenological Sciences at the University of Turin, found it was the Australian wine industry which held his interest. After working vintages in Piedmont, this interest intensified to the point where he moved to the Alpine Valley of Victoria where he worked as winemaker with Gaspted Wines. He commenced his PhD with Charles Sturt University at the National Wine and Grape Industry Centre in 2014 on lower alcohol production. His studies focussed upon the chemical impact of blending and dealcoholisation practices on sensory properties in lower alcohol wine.

Rocco commenced as Postdoctoral Research Fellow with UTAS at TIA in 2018.  Development of in-line and real time sensing of juice quality for sparkling wine production, and benchmarking of Australian Pinot Noir wines, are now a major focus of Rocco’s research activities.

Research Themes

Rocco’s research interests within the Fermentation Research Group (FRG) focus on spectrophotometric measures for in-line sensing of juice quality for sparkling wines and for discriminating the provenance of juice. Rocco’s work also focuses in chemical (phenolics, aroma matrix analysis) and sensory benchmarking of Australian Pinot noir. This area of research also involves collection and interpretation of site, soil and climate factors across the supply chain for Australian wines to describe triple bottom line metrics for traceability and terroir.
