This unit sets the foundation for the study of food and its components. It will describe the role and function of macro and micronutrients essential for human health, their digestion and absorption, and relevance for the health of populations and individuals. It will introduce methods used to assess food intake and data analysis by the use of food composition tables, in relation to Nutrient Reference Values used in Australia.

Teaching Pattern

Face-to-face, 2 hour lectures weekly, 2 hour tutorial/practical weekly (13 weeks).


3,000 word dietary composition assignment (30%), mid-semester test (30%), 2 hour final examination (40%)
