Tom is a Professor in food microbiology and Director of the ARC Training Centre for Innovative Horticultural Products. His research involves development of knowledge, and its integration into mathematical models and computer software, to describe and predict the growth and death of bacteria in foods. That knowledge and those technologies are widely used by the Australian food industry and Australian and New Zealand government agencies. Tom's expertise is recognised and valued internationally as evidenced by his service on numerous expert consultations convened by the United Nations Food and Agriculture Organisation's Joint Expert Committee on Microbial Risk Assessment (JEMRA), the International Commission on Microbiological Specifications for Foods (ICMSF), and International Committee on Predictive Modelling in Food. In 2017 Tom was invited onto the Executive Board of the International Committee on Food Microbiology and Hygiene (ICMFH) and contributed to the United States Food and Drug Administration's (USFDA) food safety risk assessment software platform.
Biography
Since graduating with his PhD in 1994, Tom has developed his career as a member, and active contributor to the development, of the Food Safety Centre in the Tasmanian Institute of Agriculture at the University of Tasmania. The Centre is recognised internationally both for academic and practical contributions to microbial food safety assurance and has developed knowledge and computer programs that are used in the food industry and by government agencies to improve food safety and shelf life. Tom has written over 130 scientific papers and book chapters on microbial behaviour in foods, with particular emphasis on application of predictive modelling and quantitative risk assessment to support food safety management.
Tom is active in undergraduate and postgraduate teaching and training, including development of new units and courses. He has a particular interest in communicating the importance and benefits of science to the community and in teaching students to be able to communicate their knowledge in 'plain English'. He has developed or contributed to numerous training courses on microbial food safety in Australia and internationally. Tom has supervised or co-supervised 23 PhD graduates, most of whom now work in the food processing industry, for government food safety organisations, or as researchers and teachers.
Tom has been a member of numerous expert consultations on food safety risk assessment and risk management convened by the Australian government and industry organisations and, internationally, by the UN's Food and Agriculture Organisation and World Health Organisation. He often develops and contributes to international training workshops on food safety management, microbial risk assessment and statistical sampling schemes. He was appointed to permanent membership of the International Commission on Microbiological Specifications for Foods in 2007 and to the Executive Board of the International Committee on Food Microbiology and Hygiene (ICMFH) in 2017.
Tom is currently leading the ARC Training Centre for Innovative Horticultural Products, which is funded by the Australian Government through the Australian Research Council Industrial Transformation Research Program, Woolworths and the University of Tasmania. The Centre is located at the Tasmanian Institute of Agriculture and collaborates widely with industry and researchers.

Tom is the course coordinator for the Microbiology major in BSc, and teaches microbiology into a range of undergraduate and post-graduate courses. Research Themes
Tom's research contributes to several of the University's research themes including Environment, Resources and Sustainability; Data, Knowledge and Decisions and also Better Health.
Up to 20 to 30% of food produced globally is wasted through spoilage, mostly due to microbial growth. Given the Earth's growing human population and consequent stress on food production environments, research to minimise microbial food wastage can decrease this stress, and aid sustainability. It's also estimated that there are around 4 to 5 million cases of food-borne illness every year in Australia alone, mostly due to foodborne bacteria and viruses. While most of these illnesses are mild, there are about 100 deaths per year. Collectively foodborne illness is believed to cost Australians over $1 billion annually.
Tom's research involves studying populations of bacteria and other microbes to understand how their behaviour and responses is affected by the composition of the food and its storage environment with the aim to decrease the risk of foodborne illness and losses due to food wastage. The strategy involves developing a better understanding of microbial ecology and physiology to identify new ways to produce, process, and distribute foods that preserve their freshness as much as possible. That research leads to better products with longer shelf life and the ability to deliver high quality Tasmania and Australian foods to more distant markets thereby increasing export income and supporting sustainability of agricultural and food businesses. In parallel, that knowledge is used to find better ways to ensure the safety of foods which, apart from reducing the burden of foodborne illness, is essential for maintaining international market access and Australia's enviable reputation for clean, safe, food.
Typically the research involves systematic studies of specific microbes growing, or being inactivated, in foods or experimental systems that emulate foods. From those systematic studies, much data is generated and used to reveal reproducible patterns of behaviour. Those patterns are summarised in mathematical models that describe the observations and also our understanding of the mechanisms that control those responses. Once the models have been developed and tested, they can be incorporated into computer programs, e.g., like phone apps, and often requested by government or industry, that can be used to assess, and manage, the microbial safety and shelf life of the foods, including monitoring quality continuously through supply chains.
Much of the research has concerned the pathogens Listeria monocytogenes and Escherichia coli in meat and meat products and, more recently, in raw milk cheeses but other pathogens and products are studied. Research is currently underway to understand the mechanisms, and microbes, that cause the spoilage of fresh cut leafy salad vegetables to develop better ways to extend their shelf life.

- This project seeks to evaluate and develop glucose application as an effective and reliable intervention for shelf-life extension of vacuum-packed (VP) chilled sheep meats. Specifically, we will evaluate and optimise the potential of this intervention, including use of various lamb cuts from multiple sources at other storage temperatures to augment the evidence for addition of glucose as an intervention. Studies to evaluate the potential for further acidification of meat by lactic acid as an intervention for shelf-life extension are also important, i.e., to develop underpinning science to support the proposed intervention. The effectiveness of the proposed intervention on a commercial scale and how this affects the eating quality of VP lamb will also require rigorous investigation and optimization before commercial uptake.

- This project seeks to exploit the science underpinning red-meat shelf life and well-validated predictive models for shelf life of Australian vacuum-packed red meat in supply chains. Specifically, it will expand the applicability of existing models to predict shelf life of meat in other common packaging systems such as vacuum skin packs, modified atmosphere packs and overwrap trays. Due to recent advances in data logging and wireless communication, the project also intends to develop a user-friendly interface and/or 'app' that can directly receive data from a temperature data logger via Bluetooth or Cloud systems and translate this into a useful information for industry QA managers in real time. The new knowledge and decision-support tool developed will bring innovation to the Australian red meat industry to monitor and manage cold chains for various products including those required for further processing. The tool would have equal utility in both short and long distribution chains and would be easily accessible by the industry across all sectors (i.e., processors, transport partners, retail customers etc.) to minimise associated losses and to maintain, or enhance, customer trust.

- The Australian pork industry aims to produce pork efficiently and sustainably to meet consumer demand, while assuring its high quality (freshness). This is constantly challenged by the need to minimise the loss of product quality (including shelf life) along different supply chains and to meet a wide range of shelf life-related specifications imposed by intended markets. Accordingly, being able to assure required quality remaining for product is critical for the success of the Australian pork industry.Through our previous projects with Meat and Livestock Australia, shelf-life predictive models for vacuum-packed (VP) beef and lamb were successfully developed based on the growth rate of microorganisms present and processes of spoilage (based on odour) as a function of temperature. The models have now been adopted by many red meat processors as a reliable and cost-effective decision-support tool for better management of their cold chains, i.e., to optimise product quality, to avoid an unexpected loss of quality, to reduce wastage, reduce the need for markdowns, and, more importantly, reduce customer complaints.To develop a model for shelf-life prediction of Australian VP pork, the proposed project aims to expand the applicability of the existing tool to quantify rates of spoilage of pork in VP. Specifically, we will systematically assess shelf-life of VP pork across storage temperature ranges to define its best-before dates. The data generated and the interpretation based on this can then be used to modify and/or refine the existing predictive models to enable reliable and accurate predictions of shelf life of VP pork. Achieving this, and being able to demonstrate its scientific basis, would enable the industry to further develop the APIQ Programme (i.e., standardising methodology used for shelf-life assessment and development of national standards), while having the ability to better understand and manage cold chains.****This project links back to the original tender from MLA that involved APL - RMBD-K28321

- Australian meat has a reputation around the world for excellent shelf life. The Australian meat industry produces meat products with shelf lives ranging from a few days (entire cuts and ground meats) or several months (vacuum-packed primals) to more than a year (frozen manufacturing meat). The industry services export markets by sending whole primals for further processing. They are usually portioned, into retail-ready packs in market.Emerging markets such as China are constantly looking for Australian-made products because they do not trust their own integrity system due to high levels of food fraud. This presents an opportunity for the industry to carry out the process within Australia and transporting retail-ready packs to market, however this also presents a challenge as shelf life extension is required due to increase transport time.Meat spoilage is a complex phenomenon involving interactions among growing microorganisms, various biochemical reactions and storage environment. However, the growth of these microorganisms and the processes of spoilage are predictable in a well-defined ecosystem. A current long-term study at the Tasmanian Institute of Agriculture/University of Tasmania (TIA/UTas), funded by Meat & Livestock Australia (MLA) has developed mathematical models to predict the effect of storage temperature on the shelf life of vacuum packed (VP) beef and lamb primals. These shelf life prediction models are now available for meat processors and exporters to use to predict the shelf life of chilled vacuum-packed beef and lamb in general with capability of being tailored to specific supply chains.The aim of this study is to determine the shelf life of various beef products (striploin steak, dices and mince) in different packaging systems (i.e., in Dar Fresh packaging and modified atmosphere packaging (80% O2 and 20% CO2)). The data generated will also be used to validate the TIA/MLA shelf life prediction models with a view to extending their utilisation to other packaging of beef products.

- The pathogenic bacterium Listeria monocytogenes on Australian rockmelons caused a number of deaths in the Summer/Autumn of 2018. Similar, though much larger, outbreaks have occurred in USA, and there has been considerable research to improve sanitation methods, but there is no systematic evaluation of their relevance to Australian rockmelon growers, processors and retailers. This project will involve a systematic analysis of publicly available research on alternative disinfection methods for rockmelons and meta-analysis of their efficacy. Additionally, there will be a systematic study of how the edible components of rockmelons come to be contaminated with L. monocytogenes and how this affects the choice of sanitation methods, and will be based on investigations of previous outbreaks.
